How To Eat French Food: Bar Bouchon

How To Eat French Food: Bar Bouchon

Every once in a while, a girl’s gotta get out and splurge on something.  It used to be handbags, for me, in my New York days, what a waste.  Now, it’s food. Much better.

I took myself to Bar Bouchon, having been to the esteemed upstairs.

While big brother upstairs is busy delivering on the legacy of Thomas Keller’s refined French technique, downstairs, its younger, hipper sibling rolls up its shirtsleeves and struts the same exacting complexity on a playful bar menu. Inspired by the call of California’s market bounty and good old-fashioned American menu standards, this stripped-down ode to French elegance takes on casual classics like a braised BBQ pork sandwich, served with a tangy-sweet cabbage and fuji apple coleslaw, while nodding to staple French ingredients like brothy saffron-infused mussels and delicate, cured charcuterie. A few favorites from upstairs like Terrine de Foie Gras de Canard and Rillettes aux Deux Saumons cross-pollinate, but more whimsically opulent dishes like earthy black truffle oil-drizzled popcorn and fresh tomato soup and grilled cheese on brioche are at home on the sweeping zinc bar under the soft glow of rustic Edison light bulbs, breaking with the starch white traditions of upstairs. Liberte, Egalite, Fraternite, indeed.
